Meet the chef - Tamarin Van Zyl
Tamarin leads the culinary team at Balmoral Arms across both 1852 Scottish Brasserie and Grill as well as The Ghillies Bar. Tamarin, who hails from South Africa, is passionate about using local produce, and in Ballater, there are some fantastic local choices on our doorstep. Having previously worked with brands such as Marriott, Hilton and Hyatt, the highlight of Tamarin’s career was working at the internationally acclaimed Singita Ebony and Boulders Lodge, Sabisand, a five-star Relais & Châteaux Private Game Lodge.
