Our coastal location is home to some of Scotland's - and indeed the world's - best scallops, lobster, langoustines and sea bass.
We work with local farms, suppliers and artisan producers as much as we can to bring together the tastes of the area and the season for our menus.
Seasonal dishes are created from seafood landed locally and meat from pedigree breeds, brought to us by family butcher John Gilmour Butchers.
Steaks are aged for 28 days before meeting the grill. Seafood is fresh from the waters surrounding us.
